Cajun Chicken Sausage Soup

Since my family has started a new healthy eating lifestyle, I’ve been searching daily for new recipes to try. A majority of our meals are vegetarian, but I still like to sneak some meat in there when I can to spice things up literally and figuratively. One of my favorite types of foods to eat all year is soup because it’s easy to make, convenient to eat, and it freezes easily. Cajun Chicken Sausage Soup

Cajun Chicken Sausage Soup

2 tablespoons olive oil
1 (12oz) package of Cajun Chicken Sausage
2 cloves garlic
2 large carrots, chopped
2 celery stalks, diced
2 small zucchini, chopped
1 cup yellow onion, diced
1 teaspoon granulated garlic
Salt and Pepper to taste
1 (14.5oz) can diced tomatoes
6 cups chicken stock
1 ½ tablespoons Cajun seasoning mix
2 cups tomato sauce

1. Slice the chicken sausage into round pieces. Add to a skillet with the olive oil, onion and brown over medium high heat. Add the garlic in just before the sausage is done and cook 1 minute. Transfer the mixture to a stockpot.

2. Add the carrots, diced tomatoes, zucchini, and all of the liquids. Season with the garlic, onion, salt and pepper. Stir in the Cajun Spice Seasoning. Bring to a boil, then reduce to low and simmer.
